Originating as a humble dish made by Alicante fishermen, the combination of arroz a banda and grilled seafood stems from a practical tradition of separating a catch into two distinct courses. Rather than tossing everything into a single pot, fishermen used the small, bony rockfish (morralla) to brew a highly concentrated broth, which was used exclusively to flavour a side pan of plain rice (arroz a banda translates directly to "rice on the side"). The prime, marketable seafood—such as prawns, langoustines, and cuttlefish—was kept separate and cooked quickly over charcoal or a flat-top grill. Serving the charred, smoky grilled catch alongside the intensely savoury, broth-infused rice preserves this historic two-part culinary concept, balancing rustic coastal history with simple,

fire-cooked flavours.
