Paella de Costillas

Pork rib paella originated in the inland, mountainous areas of Valencia and Castellón, where rural communities relied on farming and livestock rather than the sea. Born out of 19th-century peasant resourcefulness, pork ribs served as a practical, affordable alternative to scarcer proteins like chicken or rabbit. Field workers combined local short-grain rice with these accessible cuts to create a hearty, filling midday meal.
This variation fundamentally changed the dish's flavour and texture. As the ribs seared, they rendered rich fats and gelatin into the pan, eliminating the need for expensive olive oil and infusing the rice with deep flavour. This abundant pork fat caramelised beautifully against the pan, making it historically prized for easily achieving the perfect socarrat—the crunchy, savoury crust at the bottom of the rice.
